SODA BREAD

Ingredients:

2 cups wholewheat flour
2 cups cake flour
5ml salt
10ml bicarbonate of soda
500 ml buttermilk or sour milk

METHOD

Combine the flours, salt and bicarbonate of soda.  Add enough buttermilk to bring the dough together and make a sticky dough.  On a lightly floured surface, knead gently and shape into a round loaf.  Cut a cross in the top.  Cover and allow to stand for 15 minutes (this helps to activate the soda) and bake in a 200 C oven for 15 minutes.  The bottom of the loaf should sound hollow when tapped.  For a richer loaf, rub 60g of butter or add an egg into flour before baking.  Enjoy warm, cut into thick slices with lashings of butter.
